  • 1/2 cup plain yogurt full-fat or Greek for extra creaminess
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 tablespoon honey or maple syrup adjust to taste
  • 1/2 cup milk any kind, to adjust consistency
  • A pinch salt

Method
 

  1. Combine rolled oats, pumpkin puree, yogurt, cinnamon, nutmeg, honey, and a pinch of salt in a mixing bowl. Stir until well incorporated and the mixture is smooth and fragrant.
  2. Pour the mixture into a jar or container with a lid, spreading it evenly.
  3. Add the milk to the jar, pouring gently to loosen the mixture if it feels too thick.
  4. Secure the lid and give the jar a gentle shake to evenly distribute the spices and ingredients.
  5. Refrigerate overnight or for at least 6 hours, allowing the oats to soften and absorb the flavors.
  6. Remove the jar from the fridge, give it a quick stir, and check the texture. If desired, add a splash more milk to loosen or sweeten with additional honey.
  7. Scoop the overnight oats into bowls, and top with your favorite toppings like nuts, seeds, or extra cinnamon for added texture and flavor.

Notes

For best results, allow the oats to soak overnight. Feel free to customize with toppings such as sliced banana, toasted pecans, or a drizzle of additional honey.
