  • 2 medium Honeycrisp apples peeled, cored, and thinly sliced
  • 1 cup fresh cranberries
  • cup light brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter cut into small cubes

  • 1 large egg
  • 1 tablespoon milk
  • Coarse sugar for sprinkling (optional)

Method
 

  1. Preheat the oven to 400°F (205°C) and line a large baking sheet with parchment paper. In a large bowl, combine the sliced apples, fresh cranberries, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, vanilla extract, and lemon juice. Toss until the fruit is evenly coated, then let it sit for about 10 minutes.
  2. Roll the pie dough into a 12-inch circle on a lightly floured surface and transfer it to the prepared baking sheet. Spoon the fruit mixture into the center, leaving a 2-inch border around the edges, then scatter the butter cubes over the filling. Fold the edges of the dough over the fruit, pleating as you go to create a rustic galette.

  3. Whisk together the egg and milk to make the egg wash, then brush it over the exposed crust. Sprinkle with coarse sugar if desired. Bake for 38 to 42 minutes, or until the crust is deep golden brown and the fruit filling is bubbling.

Notes

  • Use firm apples such as Honeycrisp, Pink Lady, or Granny Smith so they hold their shape during baking.
  • If using frozen cranberries, add them directly from the freezer without thawing.
  • Don't overfill the center, or the juices may spill over while baking.
  • A little fruit juice bubbling onto the parchment is completely normal and adds to the rustic look.
  • Allow the galette to cool slightly before slicing so the filling has time to thicken.
