  • 2 large oranges preferably organic
  • 2 sticks cinnamon use a teaspoon for the spice
  • 4 cloves whole cloves optional, for extra aroma
  • 1 quart water enough to fill your saucepan
  • 1 teaspoon honey or maple syrup optional, to mellow bitterness

Method
 

  1. Slice the oranges in half and then thinly peel the zest, avoiding as much of the bitter pith as possible. Place the zest in a saucepan.
  2. Add the cinnamon sticks and whole cloves to the saucepan, along with the water. Bring the mixture to a gentle simmer over medium heat—listen for a soft bubbling sound and notice the aroma starting to emerge.
  3. Allow the mixture to simmer softly for about 15-20 minutes, so the citrus oils and spices infuse into the water, creating a fragrant, bubbling brew.
  4. Once the aroma is rich and the liquid is slightly reduced, remove the saucepan from heat. Use a tea strainer to pour the hot mixture into a bowl or jug, catching the orange peels and spices.
  5. Stir in a teaspoon of honey or maple syrup if desired, to add a touch of sweetness and mellow the citrus brightness.
  6. Serve the warm citrus-spice infusion in mugs or small cups, enjoying the vibrant aroma and refreshing flavor as the liquid is smooth, fragrant, and beautifully translucent.

Notes

Be careful to only use the zest and not the bitter pith of the oranges. Adjust the spice levels and sweetness to your preference. This beverage can be customized with additional spices like cloves or a splash of brandy for an extra cozy touch.
