Method
 

  1. Cut watermelon into thick slices and remove the rind.
  2. Slice the flesh into thin matchstick-style strips.
  3. Place watermelon fries in the refrigerator to chill.
  4. In a bowl, pour the full-fat coconut milk.
  5. Add freshly grated lime zest to the milk.
  6. Stir in the fresh lime juice.
  7. Add honey if extra sweetness is preferred.
  8. Whisk until smooth and creamy, adjusting thickness with more coconut milk if needed or adding a spoon of yogurt/coconut cream to thicken.
  9. Lightly toast shredded coconut in a dry pan if desired.
  10. Allow toasted coconut to cool completely.
  11. Arrange chilled watermelon fries neatly on a platter.
  12. Sprinkle toasted coconut over the dip or serve it on the side for dipping and extra texture.
