Ingredients
  

  • 4 cups watermelon, cubed and seeds removed ripe and juicy
  • 1/4 cup lime juice freshly squeezed
  • 1/4 cup tequila silver or blanco preferred
  • 2 tsp balsamic vinegar for drizzle and flavor depth
  • 6 leaves fresh basil for blending and garnish

  • to taste ice cubes for chilling and texture

Method
 

  1. Cut the watermelon into manageable cubes, approximately 1-inch in size, removing any large seeds with a spoon or knife.
  2. Add the watermelon cubes, lime juice, tequila, fresh basil leaves, a pinch of salt, and a handful of ice cubes into the blender.

  3. Blend on high speed until the mixture is smooth, thick, and frothy, about 30-45 seconds. The colour should be vibrant pink-red and the texture creamy with small pulp bits.
  4. Pour the blended cocktail into chilled glasses, leaving a small space at the top for garnish.
  5. Drizzle each glass with a few drops of balsamic vinegar and add a fresh basil leaf on the rim as decoration.

Notes

For a sweeter beverage, add a touch of honey or agave syrup before blending. Adjust ice quantity for desired consistency.
