  • 4 cups ripe watermelon flesh, cubed seedless if possible
  • 10 leaves fresh mint leaves washed

Method
 

  1. Place the cubed watermelon and mint leaves into the blender jar.

  2. Blend on high speed for about 30 seconds until the mixture is smooth and the mint is finely minced, with a vibrant pink liquid beginning to form.
  3. Optional: add honey or agave syrup to the blender, then pulse a few times to incorporate evenly.

  4. Place a fine mesh strainer or sieve over a large bowl or pitcher and pour the blended mixture through it.
  5. Use a spatula or back of a spoon to gently press and strain the juice, extracting as much liquid as possible while leaving behind pulp and large mint pieces.
  6. Transfer the strained juice to glasses, optionally garnish with extra mint leaves, and serve immediately for a cool, refreshing summer drink.
