Place the watermelon cubes into a blender, add honey and a pinch of salt, then blend until smooth and uniform in texture, about 30 seconds. The mixture should be bright red and slightly frothy.
4 cups watermelon, cubed, 2 tablespoons honey or agave syrup, 1 pinch salt
Pour the blended watermelon mixture into popsicle molds or small disposable cups, filling each about 3/4 full. Insert sticks or reusable handles into each mold.
4 cups watermelon, cubed
Place the molds in the freezer on a level surface and freeze for at least 4 hours, or until completely solid and firm to the touch.
Once frozen, remove the Pops from the molds by running warm water briefly over the outside or gently pulling the sticks. Serve immediately, revealing the icy, crackling texture and vibrant red color.
