Method
 

  1. Line your 8-inch square pan with parchment paper, leaving overhang for easy removal.
  2. Combine butter, sugar, and cocoa powder in a heavy-bottomed saucepan over medium heat.
  3. Stir constantly with a silicone spatula as the mixture melts, bubbling gently and turning glossy, about 5-7 minutes.
  4. Remove the pan from heat and quickly stir in vanilla extract, chopped chocolate, bourbon, and a pinch of smoked salt or chili flakes if using. Mix until the chocolate is fully melted and incorporated.
  5. Pour the hot fudge mixture into the prepared pan, using a spatula to spread it evenly and smooth the top.
  6. Let the fudge cool at room temperature for about 2 hours, or until it’s set and shiny.
  7. Once firm, lift the fudge out of the pan using the parchment overhang and cut into squares with a sharp knife.
  8. Let the cut pieces sit for about 10 minutes to soften slightly before serving for the best melt-in-your-mouth experience.
