  • 2 cups cherry tomatoes halved or chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil plus extra for drizzling
  • 1 tbsp fresh basil chopped

Method
 

  1. Preheat the oven or toaster to 375°F (190°C). Arrange the baguette slices on a baking sheet in a single layer.
  2. Toast the baguette slices in the oven for about 8-10 minutes, until golden brown and crispy around the edges. Keep an eye to prevent burning and listen for a gentle crunch when tapped.
  3. While bread toasts, combine the chopped tomatoes, minced garlic, chopped basil, 2 tablespoons of olive oil, salt, and pepper in a mixing bowl. Mix thoroughly until well combined and the mixture is juicy.
