Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft.
  3. Add a pinch of salt while sautéing onions to build a deeper flavor base.
  4. Stir in minced garlic and cook for another minute.
  5. Add diced sweet potatoes and mix well.
  6. Pour in crushed tomatoes.
  7. Add black beans and kidney beans.
  8. Sprinkle in chili powder, cumin, and cinnamon.
  9. Stir everything to combine.
  10. Add 1–2 cups of water or vegetable broth to achieve a stew-like consistency.
  11. Cover and simmer for 30–35 minutes, until sweet potatoes are fully tender.
  12. Mash a few pieces slightly to thicken the chili.
  13. Season with salt and pepper and serve warm.

Notes

Roast the sweet potatoes until caramelized for extra flavor. Adjust spice levels with additional chili powder or cayenne if you like heat. Finish with a squeeze of lime for a fresh twist.
