Add the egg to the mixture and beat until fully incorporated. In a separate bowl, whisk together flour, baking powder, and a pinch of salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
Gently fold chopped strawberries into the dough using a spatula, distributing evenly without breaking the berries.
Use a cookies scoop or spoon to portion out dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten the tops with the back of a spoon or fingers.
Bake in the preheated oven for 12-14 minutes, or until the edges are golden brown and centers look set. Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
