Method
 

  1. Preheat oven to 180°C (350°F).
  2. Cream butter and sugar until light and fluffy.
  3. Beat in softened cream cheese until smooth.
  4. Add egg and vanilla extract and mix well.
  5. Combine flour and baking powder in a separate bowl.
  6. Gradually mix dry ingredients into wet mixture.
  7. Pat chopped strawberries dry thoroughly or use very small pieces to reduce excess moisture in the dough.
  8. Scoop dough onto lined baking tray leaving space.
  9. Bake for 12–15 minutes until lightly golden.
  10. Cool cookies completely on a rack.
  11. Spread whipped cream cheese filling over one cookie.
  12. Add strawberry slices and top with another cookie.
  13. Repeat stacking to create layered dessert cookies.
