  • Brown sugar 1/4 cup: Adds sweetness and slight caramel notes.
  • Water 1–2 cups: Use more if simmering longer for aroma.

Method
 

  1. Peel, core, and slice the pineapple into bite-sized pieces.
  2. Add the pineapple to a medium saucepan.
  3. Pour in the water to create the base.
  4. Add Cinnamon stick and whole cloves.
  5. Stir in the brown sugar until dissolved.
  6. Bring the mixture to a gentle simmer over medium heat.
  7. Reduce the heat and let it simmer for 20–25 minutes, until the pineapple softens and absorbs the spices.
  8. Stir occasionally to prevent sticking.
  9. Add vanilla extract towards the end to preserve its delicate aroma.
  10. Let the pineapple soften and absorb the flavors.
  11. Remove from heat and allow it to cool slightly.
  12. Serve warm or keep it simmering on low for aroma.

Notes

Add a small squeeze of lemon juice at the end for a brighter, more balanced flavor.
