  • 4 cups apple cider preferably unfiltered for richer flavor
  • 1 stick cinnamon a whole cinnamon stick
  • 2 stars star anise whole star anise pods
  • 3 cardamom pods cardamom lightly crushed

Method
 

  1. Pour the apple cider into a saucepan and place it over medium heat.
  2. Add the whole cinnamon stick, star anise, and lightly crushed cardamom to the cider.
  3. Bring the mixture to a gentle simmer, watching for small bubbles that form around the edges.
  4. Reduce the heat to low and cover the saucepan with a lid to allow the spices to infuse fully.
  5. Let the cider simmer gently for about 15-20 minutes, allowing the flavors to meld and the aroma to fill your space.
  6. Remove the saucepan from heat and strain the cider through a fine mesh or cheesecloth to remove the whole spices.
  7. Pour the hot, infused cider into mugs or cups, keeping the cozy warmth intact.

Notes

For a sweeter flavor, add a touch of honey or orange zest during simmering. Adjust spice quantities to taste for more or less aroma.
