Method
 

  1. Pour the apple cider into a medium saucepan and place it over medium heat.
  2. Add the cinnamon sticks, whole cloves, and orange peel (if using) to the cider.
  3. Gently bring the mixture to a simmer, making small bubbles around the edges, and reduce the heat to low.
  4. Let the cider simmer gently for about 15-20 minutes, allowing the spices to release their warm aroma and flavor.
  5. Stir the cider occasionally with a wooden spoon and watch as the liquid darkens slightly and fills the air with a spicy, fruity scent.
