Ingredients

  • 1/4 cup honey or more for extra shine
  • 2 pieces chipotle in adobo finely chopped
  • 1/4 cup brown sugar packed
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced

Equipment

  • Small saucepan
  • Pastry brush
  • Sharp Knife
  • Roasting Pan
  • Meat thermometer

Method

  1. Preheat your oven to 180°C (350°F) and place the ham on a clean surface.
  2. Score the surface of the ham in a diamond pattern, making shallow cuts about 1 inch apart to help the glaze penetrate and create an attractive appearance.
  3. Combine honey, chopped chipotle, brown sugar, lemon juice, soy sauce, and minced garlic in a small saucepan.
  4. Simmer the mixture over medium heat, stirring occasionally, until it thickens slightly and becomes glossy, about 10 minutes.
  5. Using a pastry brush, generously coat the scored surface of the ham with the thickened glaze, ensuring all cuts are coated evenly.
  6. Place the ham in a roasting pan and bake uncovered for about 1 hour, basting with more glaze every 15 minutes to build a shiny, caramelized crust.
  7. Increase the oven temperature to 200°C (390°F) during the last 10 minutes to deepen the caramelization, watching closely to prevent burning.
  8. Remove the ham from the oven and let it rest for 15 minutes; this helps the juices redistribute and keeps the glaze intact.
  9. Slice the ham into thick, juicy pieces and serve with a drizzle of any remaining glaze for extra flavor and shine.

Notes

For a milder smoky flavor, reduce the amount of chipotle or omit the seeds. This glaze pairs beautifully with both traditional and boneless hams, and leftovers can be used in sandwiches or salads.
