- Heat olive oil in a skillet over medium-high heat.
- Sear the pork on all sides for about 4 minutes until it’s nicely browned.
- Transfer the pork to the slow cooker.
- Add chopped apples, apple cider, cinnamon, salt, and black pepper to the slow cooker.
- Stir to combine the ingredients and coat the pork.
- Cover the slow cooker and cook on low for 6-8 hours, or until the pork is tender and easily shreds.
- Once the pork is done, remove it from the slow cooker and let it rest for 5 minutes before shredding.
- Serve the shredded pork with the apples and cider from the slow cooker.
- Optionally, garnish with fresh herbs like parsley or thyme.
Notes
For an extra caramelization, you can broil the shredded pork briefly after returning it to the sauce, to create a slight crispy texture on the edges.
