  • ½ cup pepitas pumpkin seeds
  • ½ teaspoon baking powder
  • 1 teaspoon pumpkin pie spice

Method
 

  1. Preheat the oven to 350°F. Line a 9x9-inch baking pan with parchment paper, leaving enough overhang to lift the bars out after baking.
  2. In a large mixing bowl, combine the rolled oats, chopped pecans, pepitas, baking powder, pumpkin pie spice, cinnamon, and salt until evenly mixed.
  3. In a separate bowl, whisk together the pumpkin puree, maple syrup, honey, melted coconut oil, vanilla extract, and egg until smooth.

  4. Pour the wet mixture into the dry ingredients and stir until everything is evenly coated. Fold in the mini chocolate chips if using.

  5. Transfer the mixture to the prepared pan and press it firmly into an even layer with a spatula or the back of a measuring cup.
