  • 1 cup old-fashioned rolled oats
  • 2 cups milk of choice
  • ½ cup pumpkin puree
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons chopped pecans or walnuts
  • 1 tablespoon pumpkin seeds
  • Optional toppings: sliced banana chopped apple, dried cranberries, extra maple syrup

Equipment

  • Medium saucepan
  • Measuring cups and spoons
  • Wooden Spoon or Silicone Spatula
  • Serving bowls

Method

  1. Warm the milk in a saucepan over medium heat until it begins to steam, but don't let it boil. Whisk in the pumpkin puree until the mixture is silky and evenly combined.

  2. Stir in the rolled oats along with the pumpkin pie spice, cinnamon, and salt. Cook over medium-low heat, stirring every minute to keep the oats from sticking to the bottom of the pan.

  3. Once the oats begin to soften, mix in the maple syrup and vanilla extract. Continue cooking until the oatmeal is thick, creamy, and the oats are fully tender.

  4. Taste the oatmeal and adjust the sweetness or spices if needed. If it's too thick, loosen it with an extra splash of milk until it reaches your preferred consistency.

Notes

  • For the richest texture, use whole milk or a creamy plant-based milk like oat milk.
  • Old-fashioned oats create the best balance of creaminess and texture. Quick oats will cook faster but produce a softer bowl.
  • If you're making breakfast ahead, prepare the oatmeal as directed and refrigerate it for up to 4 days. Reheat gently on the stovetop or in the microwave with a little milk stirred in.
  • To boost the protein, stir in a spoonful of almond butter, peanut butter, or vanilla protein powder after cooking.
  • Feel free to swap maple syrup with honey or brown sugar, depending on what you have on hand.
  • A sprinkle of toasted coconut, chopped pecans, or granola adds a nice crunch just before serving.
