Ingredients
  

  • 1 cup popcorn kernels or about 8 cups popped popcorn (plain or lightly salted)
  • 1/2 cup unsalted butter cut into pieces
  • 10 oz marshmallows mini or standard, halved if large
  • 1 teaspoon vanilla extract
  • 1 –2 cups red white, and blue sprinkles

Method
 

  1. Pop the popcorn and place it in a large bowl, removing unpopped kernels
  2. Melt butter in a saucepan over low heat
  3. Add marshmallows and stir until completely melted and smooth
  4. Stir in vanilla extract
  5. Pour the mixture over popcorn and mix quickly to coat evenly
  6. Add sprinkles immediately after mixing the marshmallow mixture with popcorn, while it's still sticky
  7. Spread onto a tray and let it cool slightly
  8. Serve once set

Notes

For extra color, use themed edible glitter or additional decorative toppings. Store in an airtight container for up to 2 days to maintain crunch.
