Ingredients

  • 4 large carrots preferably thick and sturdy
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • a pinch sea salt flakes
  • optional to taste ground black pepper freshly cracked
  • optional to taste spices like cinnamon or thyme

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Spatula or tongs

Method

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash the carrots thoroughly and peel if desired. Then, cut them into long, even halves or thirds to promote uniform roasting.
  3. In a mixing bowl, whisk together the maple syrup, olive oil, a pinch of sea salt, and optional spices until well combined and slightly thickened.
  4. Add the cut carrots into the bowl and toss gently with the glaze until all pieces are evenly coated and glossy.
  5. Arrange the coated carrots in a single layer on the prepared baking sheet, leaving space between each piece to ensure even caramelization.
  6. Roast the carrots in the oven for about 25-30 minutes, shaking the pan or turning the carrots once halfway through, until edges are deep amber and slightly charred, and the carrots are tender when pierced with a fork.
  7. Remove the carrots from the oven and let them rest for 5 minutes. They will be sticky, glossy, and fragrant with a smoky maple aroma.
  8. Sprinkle with flaky sea salt and freshly cracked black pepper if desired, to enhance the sweet and smoky flavors.
  9. Serve the carrots warm as a side dish, allowing the caramelized glaze to shine and the tender texture to delight.

Notes

For a richer flavor, try adding a pinch of smoked paprika or fresh thyme before roasting. These carrots are best enjoyed within 2 days; reheat gently in a warm oven to preserve their glossy, caramelized finish.
