Ingredients
  

  • 2 cups dried navy beans soaked overnight or quick-soaked
  • 1 large yellow onion diced
  • 3 tablespoons maple syrup pure
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika optional, for depth
  • 2 cloves garlic minced
  • 4 cups water for soaking beans or cooking
  • 1 can (15 oz) canned navy beans for quick option if dried beans aren't soaked

Method
 

  1. If using dried beans, rinse them and soak overnight in water, then drain. If using canned beans, drain and rinse them thoroughly.
  2. Add soaked dried beans to a large pot with water and bring to a boil. Reduce heat and simmer until beans are tender, about 45-60 minutes. Drain and set aside. If using canned beans, skip this step.
  3. Chop the yellow onion and mince the garlic, then set aside. This builds the flavor base for the dish.
  4. Place the cooked beans (or canned beans), diced onion, minced garlic, smoked paprika, and Worcestershire sauce into the slow cooker. Pour in water just to cover the ingredients. Stir to combine.
  5. Stir in the pure maple syrup, ensuring it's evenly distributed, then cover the slow cooker and set to low. Let it cook gently for 4 hours, allowing flavors to meld, and beans to become lush and glossy.
  6. Once the cooking time is up, remove the lid and increase the slow cooker to high. Let the mixture simmer uncovered for about 15 minutes, stirring occasionally, until the glaze thickens and adheres to the beans.
  7. Check the final consistency; the beans should be tender with a shiny, caramelized coating of maple glaze. Taste and adjust seasoning if needed.

Notes

For extra smoky flavor, add a pinch of liquid smoke. Serve hot as a hearty side or main dish with crusty bread or rice.
