- Cut the avocados in half, remove the pits, and scoop the flesh into the blender. The avocados should be dark and slightly soft to ensure a silky texture.
- Add the lime juice and coconut milk to the blender, then blend on high until the mixture is smooth, creamy, and free of lumps. This should take about 30 seconds and smell fresh and citrusy.
- Pour in the honey or agave, then blend again briefly to incorporate. Taste the pudding and add more sweetener if you prefer it sweeter.
- Scrape down the sides of the blender with a spatula to ensure everything is evenly mixed, then blend once more until perfectly smooth and velvety.
- Pour the pudding into serving glasses or bowls. Cover and place them in the fridge to chill for at least 1 hour, allowing the flavors to meld and the pudding to set slightly.
