Method
 

  1. Place the fresh strawberries, granulated sugar, and lemon juice into a large saucepan. Stir gently to coat the berries evenly.
  2. Using a wooden spoon or potato masher, mash the strawberries until they begin to release their juices and combine well with the sugar.
  3. Set the saucepan over medium heat and bring the mixture to a steady rolling boil while stirring frequently to help the jam thicken properly.
  4. Reduce the heat and allow the jam to cook for about 20–30 minutes or until the mixture thickens and bubbles become slower and heavier.
  5. To check readiness, place a small spoonful of jam on a chilled plate. If it wrinkles slightly when pushed, the jam is set and ready.
  6. Carefully pour the hot jam into sterilized jars, seal them, and allow the jam to cool completely at room temperature before storing.

Notes

Skim off any foam during boiling to keep the jam clearer and smoother in texture.
