Ingredients
  

  • 2 sticks cinnamon sticks preferably whole
  • 3 stars star anise whole
  • 1 orange orange peel fresh, with pith removed
  • 1 lemon lemon peel fresh, with pith removed
  • 4 cups water enough to cover the spices

Method
 

  1. Place the cinnamon sticks, star anise, and citrus peels into a medium-sized pot.
  2. Pour in four cups of water, enough to submerge the spices completely.
  3. Bring the mixture to a gentle simmer over medium heat, listening for a soft bubbling sound.
  4. Reduce the heat to low once simmering begins, and let it quietly bubble for about 20 to 30 minutes to release fragrant essential oils.
  5. Stir the mixture occasionally with a wooden spoon to prevent the spices from settling or scorching at the bottom.
  6. Monitor the liquid level, adding a splash of water if it reduces too much, ensuring the mixture continues to simmer gently.
  7. Once you notice a warm, spicy aroma filling the room and the liquid is slightly reduced, remove the pot from heat.
  8. Strain out the cinnamon sticks, star anise, and citrus peels, or leave them in for a more rustic, aromatic look.
  9. Serve the fragrant liquid warm in a bowl or let it sit on the stove to continue infusing the house with holiday scents.
