  • 1/2 cup pumpkin purée unsweetened
  • 1/2 cup almond milk or other dairy-free milk
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 2 large eggs
  • pinch salt
  • 2 tablespoons coconut oil or butter for cooking

Method
 

  1. Slice the bread into thick pieces and arrange them in a shallow dish.
  2. In a mixing bowl, whisk together the pumpkin purée, almond milk, maple syrup, cinnamon, ginger, nutmeg, cloves, eggs, and a pinch of salt until smooth and well combined. The mixture should be slightly frothy and fragrant.
  3. Pour the pumpkin custard over the bread slices, ensuring each piece is fully soaked. Let them sit and soak for about 5 minutes to absorb the flavors.
  4. Heat a skillet over medium heat and add the coconut oil or butter, waiting until it melts and begins to shimmer.
  5. Place the soaked bread slices onto the hot skillet. Cook for about 3–4 minutes on each side, until golden brown and slightly crispy around the edges. Use a spatula to flip carefully and ensure even browning.
  6. Once golden and cooked through, transfer the French toast to a serving plate. Repeat with remaining slices if necessary.
  7. Serve warm, topped with your favorite autumnal garnishes such as additional maple syrup, chopped pecans, or a dusting of powdered sugar.

Notes

For extra flavor, sprinkle toasted pecans or a drizzle of honey before serving. Adjust spices to taste for a more or less warm flavor profile.
