Method
- Slice the bread into thick pieces and arrange them in a shallow dish.
- In a mixing bowl, whisk together the pumpkin purée, almond milk, maple syrup, cinnamon, ginger, nutmeg, cloves, eggs, and a pinch of salt until smooth and well combined. The mixture should be slightly frothy and fragrant.
- Pour the pumpkin custard over the bread slices, ensuring each piece is fully soaked. Let them sit and soak for about 5 minutes to absorb the flavors.
- Heat a skillet over medium heat and add the coconut oil or butter, waiting until it melts and begins to shimmer.
- Place the soaked bread slices onto the hot skillet. Cook for about 3–4 minutes on each side, until golden brown and slightly crispy around the edges. Use a spatula to flip carefully and ensure even browning.
- Once golden and cooked through, transfer the French toast to a serving plate. Repeat with remaining slices if necessary.
- Serve warm, topped with your favorite autumnal garnishes such as additional maple syrup, chopped pecans, or a dusting of powdered sugar.
Notes
For extra flavor, sprinkle toasted pecans or a drizzle of honey before serving. Adjust spices to taste for a more or less warm flavor profile.
