Ingredients
  

  • 4 cups water preferably filtered
  • 2 sprigs rosemary fresh
  • 4 sprigs thyme fresh
  • 1 cinnamon stick cinnamon whole or broken into pieces
  • 1 orange orange peel fresh, peel only

  • Saucepan or large pot
  • Ladle or spoon

Method
 

  1. Pour water into your saucepan and place it on the stove over medium heat.
  2. Add the fresh rosemary sprigs and thyme to the water, allowing their fragrant oils to start releasing as the water warms.
  3. Drop in the cinnamon stick and peel the orange, making sure the orange peel remains submerged.
  4. Bring the mixture to a gentle simmer, watching for small bubbles to form around the edges of the pan.
  5. Reduce the heat slightly and let it simmer uncovered for about 20-30 minutes, allowing the aroma to intensify and the herbs to infuse fully.
  6. Occasionally, gently stir or lift the herbs to help release more scent and check that the water level remains sufficient, adding a splash if needed.
  7. Once done, carefully remove the herbs and spices if you wish to save the stronger scents, or leave them simmering for an even richer aroma.
  8. Pour the fragrant liquid into a container or simply enjoy the simmering potpourri right from the saucepan to fill your home with a warm, seasonal scent.
