Crockpot Turkey & Pumpkin Stew

Ingredients
  

  • 1.5 pounds ground turkey or turkey pieces
  • 2 cups fresh pumpkin or canned pumpkin puree if using fresh pumpkin, roast and then mash
  • 1 cup chicken broth or turkey broth
  • 1 cup diced onion for flavor base
  • 2 cloves garlic minced
  • 1 teaspoon ground cinnamon to add warmth
  • 0.5 teaspoon dried thyme or rosemary if preferred
  • Salt & black pepper to taste

Method
 

  1. Dice the onion and mince the garlic, then set aside.
  2. In a skillet over medium heat, brown the ground turkey until it develops a golden exterior and is cooked through, about 5-7 minutes. Break it apart with a spoon as it cooks. Transfer to the crockpot once browned.
  3. Add diced onion and minced garlic to the skillet and sauté for 2-3 minutes until fragrant and translucent. Pour these into the slow cooker with the turkey.
  4. Pour in the chicken broth, then add the pumpkin puree, ground cinnamon, thyme, salt, and pepper. Stir everything together to combine well.
  5. Cover the crockpot and cook on low for 4 hours, allowing the flavors to meld. The stew will thicken slightly and develop a rich, velvety appearance with tender chunks of turkey and pumpkin.
  6. Once done, stir the stew gently, taste and adjust the seasoning if needed. It should have a hearty, thick consistency with lovely aroma and visible chunks of meat and pumpkin.

Notes

For added texture, serve with crusty bread or sprinkle with fresh herbs. Feel free to customize with additional spices or vegetables.
