Ingredients
  

  • 2 large carrots peeled and chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cups kale stems removed and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon thyme fresh or dried
  • Salt and pepper to taste

Method
 

  1. In a sauté pan, heat olive oil over medium heat. Add diced onion and minced garlic and sauté for 3-4 minutes until softened.
  2. Transfer the sautéed onion and garlic to the Crockpot.
  3. Add chopped carrots, vegetable broth, kale, thyme, salt, and pepper to the Crockpot.
  4. Stir to combine, then cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Taste and adjust seasoning before serving.
