- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the potatoes and zucchini ahead of time and store them in the fridge. Be sure to squeeze out any excess moisture before using them to ensure the best texture for the patties.
- Squeeze out excess moisture from the grated zucchini using a clean kitchen towel or paper towels. This is important to avoid soggy patties and ensure a crisp texture.
- In a large mixing bowl, combine the grated zucchini, potatoes, Parmesan, egg, flour, salt, and black pepper.
- Drizzle in olive oil and mix until well combined.
- Scoop out tablespoon-sized portions of the mixture and form them into small patties.
- Place the patties onto the prepared baking sheet. Drizzle with a little more olive oil for extra crispiness.
- Bake for 20-25 minutes or until golden brown and crispy on the outside.
