Method
 

  1. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth and no large lumps remain. Add the eggs, melted butter, milk, sugar, salt, and whisk until combined.

  2. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Do not overmix.

  3. Heat oil in a deep fryer or heavy-bottomed pan to 350°F (175°C). Use a thermometer to ensure accurate temperature. While heating, prepare a donut cutter or ring molds and lightly flour them.

  4. Once the oil reaches the target temperature, carefully pipe or spoon the batter into the hot oil, forming donut shapes using the cutter or molds. Fry in batches, turning occasionally, until the donuts are golden brown and cooked through, about 3-4 minutes per batch.
  5. Use a slotted spoon to remove the donuts from the oil once they are evenly golden and crispy on the outside. Place them on paper towels to drain excess oil and cool slightly before serving.
  6. Serve the banana bread donuts warm, optionally dusted with powdered sugar or drizzled with chocolate. Observe the soft, moist interior contrasting with the crispy exterior for perfect doneness.
