Preheat the oven to 375°F (190°C).
Lightly grease a baking dish with butter.
In a bowl, combine rolled oats and cinnamon.
Stir in diced apples evenly.
In another bowl, whisk eggs and milk together.
Add brown sugar or maple syrup to the mixture.
Stir in melted butter and vanilla extract.
Pour wet ingredients over the oat mixture.
Mix gently just until the oats are evenly coated and the apples are distributed. Do not overmix.
Transfer mixture into the prepared baking dish.
Bake for 30–35 minutes, or until the center is set and the top turns lightly golden.
Cool slightly before slicing and serving.
