Ingredients
  

  • 4 –6 large eggs use 6 for thicker, more balanced frittata
  • 2 medium apples peeled, cored, and sliced
  • 2 tablespoons olive oil divided
  • ¼ –½ teaspoon ground cinnamon use lightly
  • 2 –3 tablespoons milk or cream optional, for softer texture
  • 1 tablespoon fresh sage chopped
  • 1/2 cup shredded cheese optional
  • Salt and black pepper to taste

Method
 

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Add sliced apples and cook until slightly softened.
  3. Sprinkle cinnamon and chopped sage, stirring gently.
  4. In a bowl, whisk eggs with salt, pepper,milk/cream and optional cheese.
  5. Pour egg mixture over apples and cook on low heat 5–7 minutes until edges are set but center still slightly soft.”
  6. Cover or transfer skillet to oven and cook until center is fully set.
