- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Add sliced apples and cook until slightly softened.
- Sprinkle cinnamon and chopped sage, stirring gently.
- In a bowl, whisk eggs with salt, pepper,milk/cream and optional cheese.
- Pour egg mixture over apples and cook on low heat 5–7 minutes until edges are set but center still slightly soft.”
- Cover or transfer skillet to oven and cook until center is fully set.
- Use remaining oil only if needed for pan or sautéing.
