- Wash and grate the zucchini finely.
- Place grated zucchini in a clean cloth.
- Squeeze out excess moisture thoroughly.
- Transfer zucchini to a mixing bowl.
- Add flour and beaten egg.
- Sprinkle salt and black pepper.
- Pour olive oil into the mixture.
- Mix until a thick batter forms.
- Preheat the air fryer to 375°F (190°C).
- Shape small fritters using a spoon or hands.
- Place fritters in the air fryer basket in a single layer, lightly brushing or spraying them and the basket with oil if needed to prevent sticking.
- Cook for 10–12 minutes, flipping halfway, until golden.
Notes
For extra crispiness, slightly thicker fritters work best. Adjust cooking time based on the thickness of your patties.
