Air Fryer Zucchini Fritters

Zucchini fritters are pan-fried or air roasted patties made from grated zucchini combined with flour, eggs, and seasonings, resulting in a crispy exterior and tender interior. When prepared in the air fryer, they develop a golden-brown crust with a moist, flavorful center, avoiding excess oil and mess.

Ingredients

  • Grated zucchini 2 cups, about 2 medium zucchinis: Provides moisture and mild fresh flavor.
  • All-purpose flour 1/4 cup: Helps bind the fritter mixture.
  • Egg 1 large, beaten: Acts as a binding agent for structure.
  • Salt 1 teaspoon: Enhances overall flavor.
  • Black pepper 1/2 teaspoon: Adds subtle savory heat.
  • Olive oil 1 tablespoon, for lightly brushing or spraying the fritters before air frying: Helps create a crisp golden exterior.

Equipment

  • Air fryer
  • Mixing bowl
  • Grater
  • Spoon or spatula
  • Measuring cups

Method

  1. Wash and grate the zucchini finely.
  2. Place grated zucchini in a clean cloth.
  3. Squeeze out excess moisture thoroughly.
  4. Transfer zucchini to a mixing bowl.
  5. Add flour and beaten egg.
  6. Sprinkle salt and black pepper.
  7. Pour olive oil into the mixture.
  8. Mix until a thick batter forms.
  9. Preheat the air fryer to 375°F (190°C).
  10. Shape small fritters using a spoon or hands.
  11. Place fritters in the air fryer basket in a single layer, lightly brushing or spraying them and the basket with oil if needed to prevent sticking.
  12. Cook for 10–12 minutes, flipping halfway, until golden.

Notes

For extra crispiness, slightly thicker fritters work best. Adjust cooking time based on the thickness of your patties.
